Demonstration Centre for Milk Processing Opens with Financial Support from Switzerland

Vassil Levski Village, South Central Bulgaria, June 20 (BTA) - A
 demonstration centre for processing milk from rare local
buffalo and sheep breeds and direct sale of dairy products was
opened in the Village of Vassil Levski near Karlovo on Friday.
The centre has been built and furnished with financial support
from the Bulgarian-Swiss Cooperation Programme. Swiss Ambassador
 in Sofia Denis Knobel attended the opening.

The centre uses milk from Bulgarian Murrah buffaloes and from
Karakachan sheep, raised on the family farm, to produce yoghurt
and white brined cheese according to traditional recipes. The
company was registered in March 2015 and offers its products on
a newly opened farmers' market in Sofia, at exhibitions and
festivals.

"This is a small project, but it is exceedingly important
because we in Switzerland know that small is beautiful,"
Ambassador Knobel said. He would like to be able to buy the
family farm products in the capital city.
