Bulgarian Svetoslav Mitev won the Pizza World Cup 2023 for the best pizza in the classic category, Bulgarian Association of Pizza Chefs Deputy Chair Anatoly Kolev said here on Monday. Mitev is 23 years old and was awarded the accolade at the 21st edition of the competition which took place on October 3-5 in Rome, Italy.

Some 180 pizza makers from around the world participated in the competition. Kolev pointed out that Japan, France and Spain were heavily represented. Mitev was the only Bulgarian and became the winner with the unanimous decision of the 20-member jury.

The best pizza in the world this year was based on an original recipe with Bulgarian farm products - Elena round from the Elena region, goat cheese cream with truffle from Veliko Tarnovo and organic common purslane from the Varna region. The pizza was made of first-class dough with live sourdough, kneaded with Italian premium flour.

Water with silver ions was used for the dough, which also happened for the first time, explained Kolev. The young Bulgarian pizza maker presented his creation with a glass of red Merlot, winner of three consecutive awards for the best wine in the country.

In addition to the world championship title in Italy, Svetoslav Mitev also won first prize at the Second International Pizza Championship, held in Romania at the end of September.

The young man has been working in the Varna pizza bar Pepperoni for only one year.
