Bulgarian saffron ranks among the top three in the world in terms of quality, based on data from laboratory analyses conducted in Bulgaria and abroad, BTA learned from Antonio Bonev, head of the Bulgarian Saffron Producers Association (BSPA). He presented the qualities of saffron during the U.L.I.C.A. – Street Fest in Stara Zagora this weekend.
Bonev told BTA's Emil Dimov that an average of 190 flowers are needed to produce 1 gram of dry saffron. This amount can be used to make about 190 cups of tea, and the medicinal properties of saffron are legendary and have been used since ancient times. "Studies show over 150 active compounds, which are responsible for its health benefits. Saffron crocus thrives in Bulgaria's climate and geography, as well as our fertile soils," added the BSPA Chairman.
He noted that growing saffron itself is not very difficult, but when it comes to implementation, people need to think carefully about how much land they can cultivate. "The flowering season is coming up in October and November. The flowers are harvested for an average of 40 days, and we as an Association can offer advice and consult with each producer with any information they may need," said Bonev. The BSPA currently has 48 members from all over the country.
According to him, there is growing interest in saffron products in Bulgaria. Its qualities as a spice are particularly appreciated by chefs, but its consumption is becoming more widespread because saffron products are good for health and beauty. "We want to promote them even more among Bulgarians because saffron is high-quality and valuable not only as a spice but also as a herb. We hope people will give it a chance," said the BSPA Chairman.
Bonev specified that the BSPA partners with various institutions, including the Ministry of Agriculture and Food, but there is a need for the production of the plant to be regulated. "At the end of November, we will try to organize a meeting with the Ministry to clarify the issues that are important to us and to establish a solid position on the map of producers of various crops. We have the support of a wide range of agricultural organizations, but we also expect support from the State," Bonev told BTA.
